Ther are LOTS of musicians fighting the industry on this and in the end the industry can never put the genie back in the bottle—now that technogly has made it possible for a any bunch of folks to record high quality music at a fraction of the cost of yesteryear, the industry is running scared—they may actually have to work for a living! I for one would love to see the profits back in the pockets of the musicians!—sorry–i will get off my soapbox now!

    Yes stealing is stealing—but not all file sharing is stealing—what interests me in this area is the opportunity for musicians to control their OWN destiny and get out from the control of FOUR recording companies that control the recording industry–and the radio air play that determines whether i can ever even hear a band or not! I do not encourage stealing ANYONES music-in fact i know lots of folks who’s music is being stolen all the time–i am in favor of using this new technology to actually benefit the artist and not the middle men. I would like to see a recording industry where the musicians on a cd actually makes more money then the company who makes the plastic used in the cd and its package! Actually–if you read the article that Janis Ian wrote–you’ll see that she does too—and she has considerable expertise in this area. She is not alone; Don Henley of Eagles fame, is very active in this arena and you might want to check them out.

    Way off the subject…but regarding file sharing. It’s a case of the industry not keeping up with technology. They are charging people 18 dollars for a CD that costs someone 3 cents to burn. If they had started up "download sites" like the porn industry did (always forward-thinking in how to make a buck), I would gladly shell out a monthly membership fee or per-download fee. But now that they are finally talking about doing fee-for-download they are also throwing out exhorbitant prices, probably dooming its chances. As for "theft", no one called it theft when people made cassette tapes off the radio. Maybe bands need to get caught up with technology instead of fighting it. Johnny Lydon (nee Rotten) has taken the record industry out of the mix entirely and is selling his music solely on the net.

    Any and all unauthorized use of this diatribe will be prosecuted to the fullest extent of the law.

    Janis now resides here in Nashville and is still quite active touring, writing and recording. She is also a very nice person (I taught her how to use a computer spreadsheet many years ago)…[:)]

    My father was a novelist. Were it not for enforceable copyright laws we would have starved. As you said, stealing is stealing. There are few issues where I don’t see shades of grey, but intellectual property rights is one of those few.

    I want mac & cheese like we had in my college dining hall: baked, with maybe a bit of onion and ham, and brown on top. Very cheesy.

    Ok, yes, you have a point. I guess I have such a thing AGAINST skimi milk that I go a little overboard.

    Not only does skim milk have almost no flavor, it’s also slightly BLUE. That’s just weird.

    To make real school cafeteria mac & cheese, you need both unreconsitituted powdered milk and powdered eggs. Both were gov’t subsidies to schools in the 50’s-70’s.

    Pwingsx, All a matter of taste and a universe of other considerations. If one were to carry out your thinking a bit further, we’d be searching out the highest butterfat content cream we could get to make this dish even better. Without even tasting the end result, I can assure you that it would absoutely taste better than mac and cheese made with milk – but I think few would choose to do so. On the other hand, I wouldn’t want to make it with water either. jm

    kdiammond — were you SERIOUS when you said whole or skim milk, it doesn’t make any difference? I’m sorry, but when you put skim milk where whole milk belongs, I can taste a WORLD of difference. Skim milk isn’t worth the plastic it’s bottled in.

    I love tuna casseroles, and other kinds too, but if you put skim milk in, there is little flavor at all. I just have to respectfully disagree with you on this.

    And yes, Janis Ian still tours, and still records. I found her site because she wrote a very incisive piece on the music industry vs. the supposed threat of MP3s on the internet.

    The recipe we use started as the one on the back of the Meuller’s elbow macaroni box, though we go a bit overboard with the cheese. Yes, you start it on the top of the stove (like the recipe in the link), but you finish it in the oven (like the recipe in the link).

    Folks, the best mac and cheese begins with a roux. Just add 3T of Wondra (yes please use this flour — makes it fool proof) to 3T of butter and stir over low heat till golden. Then start cooking a pound of pasta according to directions. Next add to the roux a pint of milk (whole or skimmed — does not make too much diff). Stir till thickened. Then add to the cream sauce a pound of shredded cheddar (no velveeta please) then pepper to taste (bout a 1/2 tsp. Once the pasta is cooked (about the time the cheese will have melted) add to the noodles and then bake at 350 for about an hour. Some like bread crumbs on top– you do not need to butter them as the butter from the cheese will rise to the top. That is it– serve and enjoy. Have made this for years — including at a construction site where I once worked. Always did it in a disposable pan (usually in about triple quantity) and the pan came back clean!
