One of my favorite sandwiches is bologna on wheat bread (preferably toasted) with sauerkraut, pickles and mustard.
I love Ruebens. I also love doing pork chops in the pressure cooker with sauerkraut——-that would probably be great on a sandwich (I usually make lots, so it’s on my to-do list now!). It is hard to be a hot dog with only kraut and mustard though. I know what I’m having for lunch today![:D]
I think all the above sandwiches sound great. I would also be more than willing to eat a cold pastrami or corned beef sandwich on rye with sauerkraut on it. So still like a reuben, just skip the grill and get right to it.
And I’d never heard of a savory kolache before. I’ve only experienced the sweet ones with a dollop of apricot, raspberry, prune, etc. The savory version sounds yummy!

An appetizer that can be served on crackers or mini bread
loaves like rye or pumpernickel.
2 packages Buddig Corned Beef (found in the deli section)
1 can or equivalent of sauerkraut
1 8 oz bar of cream cheese
8-12 oz of shredded swiss cheese
milk (enough to make it the consistency you prefer)
Just chop the corned beef and sauerkraut (so its not too stringy) and
combine all ingredients in a frying pan or electric skillet. I wait and
add the milk after the cheeses have melted to see how thin it needs to be.
Serve warm over crackers or bread.

mmmm.. Stenhowers sizzle steaks (those frozen minute steaks) smothered in kraut with swiss cheese on top (melted of course) served on a hamburger bun.
Also, I like to slice kiebalsa length wise, pan fry it, then steam some kraut on top of them with cheddar. Add a little mustard ontop of butter grilled bread.
Meowzart – recently on a weekend trip to the Texas hill country, we stopped at a Czech bakery in Ellinger, TX famous for their kolaches.
They had a pan sausage and sauerkraut kolache and a pan sausage with cabbage kolache. I tried the cabbage, and it was a little roll of fried peppery pan sausage wrapped in cabbage and baked inside the kolache, so I would think the sauerkraut version would be the same.
It was delicious – wish I had one right now.[:(]
Roast a small pork loin the day before and slice it thin…….I have had this with sauerkraut and love it. I always bake my sauerkraut at the same time the pork is baking. If you do not eat pork, how about sliced turkey kiebasa? We eat cold or room temp. kiebasa quite often in the summer.
Anybody have any ideas for a sandwich with sauerkraut that ISN’T a reuben? And perhaps served cold, not toasted or broiled? Just thinking of a new year’s day picnic lunch….
