I agree with scbuzz, though I have not had any in a long time. I used to catch and hold the pigs for my grandfather when he would perform this particular procedure (a very long time ago). This is a very rich meat, slightly sweet and very tender.
Is it ball season? A wonderful local restaurant, Riley’s in Syracuse has their annual ‘Testicle Spectacular" in October. They have daily specials, and sell t-shirts proclaiming "I had a ball at Riley’s".
So, do testicles have a season?

I was at a cattle sale on a ranch east of Denver. It was a high end auction where many of the cattle were selling better than $25,000 and the owner had the barn (misnomer) which was air conditioned, decorated like a island and had music, people in costume and plates and plates of hot food. A lady in costume came up with a plate and offered me cocktail and some brown fried things. I ask her what they were and she replied Rocky Mountain Oysters. I could not do it and I still can’t do it. I had the cocktails though[:D]

Here in Oklahoma "Lamb Fries" are popular starters and often found on the kids menu is local Italian places. I too have never seen them canned and RARELY even at the butchers shop–nowadays they are usally special ordered–i know very few folks that actually cook them at home other then ranchers and farmers. I did find frozen precooked "Smothered Rocky Mountain Oysters"—they werent bad—but not as good as fresh.

AND the finer steakhouses in Oklahoma City (Cattlemen’s Cafe) serve up "Lamb Fries" from their menu. Tasty little boogers, too.

Lone Star – what’s a steer bull calf? Ain’t he one or the other but not both at the same time? I always thought he was a bull calf until he provided the mountain oysters at which time he became a steer calf. I agree with all the above posts that this is one thing which doesn’t come canned; you’ve got to get ’em fresh.
I don’t know where in the world you could buy them in a jar, but here is what you need to cook them.
1 steer bull calf
pepper
lemon pepper cornmeal
flour
salt

First, take a steer bull calf and put him in a squeeze chute. Then castrate him with a very doctor-like profession.
Then you have the testicles in a bucket. Take them to the back porch of the house, slice testicles in two, and peel out the raw meat.
Make a batter of flour, a 1/5 cornmeal, pepper, salt, and lemon pepper and put it in a bag. Drop testicles in powder, and shake it real good.
Cook it on a deep fry. When they start to float in the cooking oil, they are done.
Serve with BBQ, beer, and bread. You will come back for seconds!
I believe they are best eaten whilst fresh !!! [:D] (with lots of tabasco sauce I might add) [}:)]
I wouldn’t think that they would be good candidates for pickling or preserving !! [xx(]

Um….Do they even come in a jar or a can? I don’t think they do. Can’t imagine they would have much of a shelf life. Your best bet would be to call a butcher, I would think.
