There has been some conversation on the boards before so you might want to search. At home I use peanut oil, I soak the cut up potatoes in ice water, dry them off and then fry them. A second fry does make them much more crisp.
You wont make a cripsy one that way. They need to be cooked twice. Do a search on here and you will find plenty of info on it.
I’ve really gone and done it this time.
I have decided to go with fresh hand-cut fries(both curly and straight cut). I have never done hand-cut before so I need as much advice as possible for the procedure. Off the top of my head I have the following questions:
1. What is a good sound procedure for making crispy hand-cut fries (from the time I slice the potato to the crispy final product)?
2. Is peanut oil the most cost efficient and/or tasty oil to use?
3. How does a restaurant like 5 Guys do their fries?
With a little luck (and a prayer on the side), hundreds of people will be thanking you for your response[:D]
