Thanks, Lone Star. Having both Diana Kennedy’s book and a book with Ninfa’s recipes in it, i’m going to enjoy looking up the contrasts now between the two. Good article!

Lonestar: Sincere thanks for the history lesson. Cleared up a lot of misconception on my behalf starting with the Tex-Mex railway in 1800’s, with the language dialect of mixed English and Mexican on up to what we know as Tex-Mex cooking
