Around here I’ve seen the electric conveyors hoodless, but gas ones with hoods and fire suppresion. Personally, I’d want a hood to suck out the excess heat, especially in the summer months.
I know that in Alabama & Georgia you do not have to have a hood if you run a single "Impinger" style conveyor oven but it does need to be positioned near a sprinkler head.
If you are looking to vent hot air, that is one thing. But if you are talking about a full blown commercial exhaust hood with a fire suppression system as usually seen over a stove, then in some states they are not required, as pizza ovens, or all ovens, are considered a closed, contained, unit and do not generate what are called "grease laden vapors". (even a conveyer oven that IS open on both ends…)

I have a Pizza oven and no hood,Its an electric oven. I Know,I know,but I didnt have fifteen grand to sink in another hood.

Go up to your ceiling and straight out the front or back of the building if your zoning department will allow it.
Is it possible? I want to run a double decker conveyer oven. Plan on doing 900 pies a week…but my location has 3 floors above it and to run a line for the Hood, I ma looking at a 600 ft run…how do I get around this problem.
