Also good soups for summer: chilled avocado soup or avocado/cuccumber soup.

I definately WANT to use the grill, just not looking forward to standing in front of it in this heat.

PS Lleechef, as soon as it cools down (like, in Autumn), I plan to steal that gnocci recipe!
Tomato/fresh mozzarella salad/basil/oil and balsamic.
Probably your local grocery store has cooked shrimp or crab or lobster which makes a delicious cold plate, garnish with fresh avocado, cucumber and tomatoes.
A cold fillet of poached cod (or broiled or grilled) with garlic aioli and butter lettuce is quite delicious.
You poor guys are sweating it out and we’re up here saying every day, "This weather SUCKS!!" It’s a whopping 57 degrees this afternoon. I made gnocchi on Saturday. Sheesh.
Get some intersting meats and cheeses, good french or italian bread, marinated artichokes, olives and make an antipasto plate.
Cold poached salmon is good! You could cook it late and night, fillets poach quickly, so minimal stove time. Let cool, put in fridge for following day.
Frozen, precooked shrimp are good in salads or fajitas. Shrimp salad sandwiches.
I’ve been using my slow cooker a lot in this heat, so I don’t have to turn on the stove.
Roast take home Deli chickens are great in hot weather. Mixed bean salad is a good high protein side dish.
Submarine sandwhiches, hummus is great! The grocery stores in my area also carry pre-cooked chicken breast strips. You could make fajitas roll ups and just nuke them in the microwave to warm them up.
I make baked potatoes in the microwave, also works well for rice.
BBQing is great if you have one, I don’t 🙁

A simple salad is always good, but can be perked up with good cold cuts and/or cheese.
Iced tea, cheese and crackers along with some raw veggies and possibly a cool dip for them

With the temperature at 93 and a high humidity making it feel 102 at 5:30pm, I’m definately NOT turning on the stove tonight for dinner. Tuna fish and salad is on my plate tonight.
Would love some other "no cooking involved" recipes for the next few days which looks to be just as hot!
