Hey yall, those chef salads sound great on a hot day.
I made chili over the w/e. Hmmm? Oh well, It’s Texas so it’s OK I guess. But I think it’s something cool tonight.
Making a big family sized chef salad tonight; with ham, boiled eggs, fresh tomatoes, cranberries and honey pecans, croutons, etc. Honey Catalin is my choice of dressing. Can’t wait.

all we’ve been eating lately are chef salads.
i throw some ham and turkey,hard boiled egg and olives
along with peppercinis on packaged salad

I like the imatation crab/lobster bits heated in the micro w/ some melted garlic butter for dipping.
I’m grilling for the rest of the week. I toss the meat on and then jump in the pool. Fed by well water only small children can stand it for very long.
Do like cold quiche however. Fresh sliced tomatoes w/ olive oil and fresh basil. Cobb salad is also nice as a cold main course.
Extremely hot in NYC today. Its supposed to be worse tomorrow.
Dinner tonight its a spanish omelete with salad.
Tomorrow’s will be a curried vegetable mix over white rice.
Lots of ice cream for dessert though….
Although its like an oven outside, sometimes I still need a warm meal inside because the house is a/c.
We have a six quart, 110 volt, Nesco electric roaster. They generate very little heat, not enough to really make a difference, and cook faster than our regular oven.
This weather is when I crank up the microwave oven. Tonight we’re having Zatarain’s Carribean Rice mix cooked in the microwave with defosted frozen shrimp added after cooking. Or I’ll cook bacon in it and have BLT sandwiches, sometimes with avacado.
When the weather is expected to be that hot and humid for a few days, I plan in advance. I marinate a bunch of chicken breasts and grill them off either early morning or late the night before. It comes in handy for any number of meals, easy and cool. The noon meal was smoked chicken salad sandwich with some fruit, the evening meal was risoto primavera cooked in the small crock pot then added some of the chicken last 1/2 hour just to heat, along with a salad and an adult beverage or two the heat and huminity became somewhat bearable. I had a tortollini salad with grape tomatoes, anchovies, Greek olives and pecorino cheese.
I like chicken salad sandwichs when it’s hot.
Trust me, those little terrorists BITE. I have scabs on my scalp to prove it……also bites on parts of the body where the sun doesn’t shine. Itch and itch some more. They are NASTY up here!
Gnats don’t bite in my area. Sounds like you have got a variation of "mimi" bugs; circa the tropics AKA Puerto Rico. [8D]
We just spent 4 days on our boat and we’re COVERED with gnat bites. Nah, I don’t want all that high heat and humidity!

Wow. That’s mild for my area this time of year. Try a high of 97 or so degrees with a humidity factor of around 98%. Hey. We got gnats also. Want some? [:o)]
