    "Nitrite, Nitrate-rich Foods May Not be so Bad After All" The Shepherd magazine recently reported on a study published by Proceedings of the National Academy of Sciences by Bryan,Calvert, Elrod, Gundewar, Ji,and Lefer. The researchers noted that the compounds reduced heart cell death in mice following a heart attack by 48%. It went on to note that animals with a low nitrite/nitrate had 59% greater injury. The Shepherd article went on to note that other studies show that an increased consumption of nitrites may cause lung disease, but the data is questioned by the new study. "The public perception is that nitrite/nitrate are carcinogens but they are not" said lead author Nathan Bryran.

    I thought it was interesting.

    I ve only tried the  health dogs that I discussed in my posting. Would be interested in sampling products from U.S. Wellness Meats, AKA Grassland Beef. I ll keep a look out for them.

    Have you had a chance to try them?
    There are none here in my area, and shipping is prohibitive.

    If I ate Hot Dogs I would most certainly want all the nitrates possible. [8D]

    No Nitrates? But I love walking down the hallway in the middle of the night glowing, and not needing to flip the light switch on…

    I think you can get them at Whole Foods if you have one of those around. I’m not obsessed with health foods but when I tried to get some pancetta at Whole Foods one time the guy at the "charcuterie" counter snottily told me, "We don’t carry anything with nitrates". Of course, I then explained to him that pancetta is naturally cured without nitrates, but at least I got the message that their hot dogs are probably nitrate-free.

    U.S. Wellness Meats
    They offer nitrate and sugar free hot dogs.
