Start with your local health dept, they will have all the answers to your questions.
First off I’d like to thank you for taking the time to pop in and say hello. I’ve enjoyed stalking your posts and the information the mods have provided.
That being said, I’m not sure if this is the business for me, although I’m fairly gregarious and get along with pretty much everyone (including the drunks and late night crowds) because I’m not sure how much time my teen kids would want to commit to helping me work it (I have lift limits on my right arm due to an old ligament tear) and I would need help setting up and tearing down. This would be the perfect job for me in every other way but my physical limitations.
I’m here because I am an avid home entertainer for large crowds (30 – 100 + on a regular basis) and a rabid volunteer with a food handlers card who has come across a cart with a grill for a decent price. But… if I were to purchase the cart for volunteer and fundraising alone I’d still have to jump through the same hoops ya’ll do (commissary, probably food handler managers card, licensing ect.) so I may as well think it through and do the numbers to see if I’m going to sink myself or if I can take this on as a possible venture that will at least pay for itself.
If you have stuck with me so far I thank you from the bottom of my heart, and promise this is almost the end. I just have a few more points to make and a few questions.
I have a few schools I support as well as a few organizations. One of the high schools rents it’s field to a local Christian College so I could set up there for all Varsity and College games (I’ve checked and it’s a yes if licensed) The other schools are attended by only about 500 at events but it’s live and learn right? I can’t lose money or my husband would pretty much kill me, but as long as I break even on my initial food investment I’m golden.
So, 1st question “Is there a feeding formula for events for a child or teen oriented crowd at an evening event?”
The next point is (last one I promise) I’m into eating and serving local foods. And making food myself. So you were talking about bacon? I’d love to offer a Sonoran Dog but I’d want to smoke the jalapeno bacon myself because the store bought stuff is nowhere near as good as mine. And a local dog vendor does a “Hog on a Dog” with pulled pork and bbq sauce that is one of the best things you’ve ever put in your mouth. But I smoke a pork butt to perfection and have literally won awards for my bbq sauce. And Brats? If I cant cook them in beer they are water brats. A Brat counts as a hot dog right?
So my 2nd question is “Can I legally start foods at home and finish them off in a commercial kitchen? Or is it an out of package deal?”
Ok, I lied. I’m not quite done yet. What’s this nonsense about vendors not being allowed to serve bacon dogs? I mean? That kinda hurt my feelings when I read it. Just saying.
