what will be next ????? I once ordered a steak of some sort without
questioning the waiter—-this was after 2 very good Bourbon Manhattans.
When I got pot roast I though there was a mistake, but no, in this fancy
place pot roast was Steak a la something-or-other.
Also carried a steak price !!!!!!!!

I made a spinach and 5-cheese lasagna that went over well at a potluck.
You are done with your dinner, but I like polenta with veggies & sauce when I’m on a non-meat day. You can make good polenta in the microwave in 18 minutes:
3/4 cup cornmeal for polenta
4 cups water
^^mix in microwaveable bowl, microwave uncovered on high for 9 minutes. Take out & stir well with a fork. Put in microwave for another 9 minutes, covered partially. Take out & stir real good, then stir in 2 tsp salt, pepper to taste, and 3 tablespoons of butter.
If you are making it for those who eat meat, substitute half the water for chicken broth, gives it a great flavor.
I don’t remember the exact recipe, but, roughly:
Chop eggplant, yellow zucchini and green zucchini into roughly equal sized cubes, saut�e in olive oil and garlic and some onion until just soft … add some oregano and other spices an little bit of dry chopped tomato … put plenty of cheese on top and cook/broil to a deep brown.
I was a vegan for two years and when I wanted to do something special that was different, I did the eggplant parmigiana. It was rather simple and everyone enjyed it.
It presents well and taste well. This recipe is similar to what I did.

I catered this for 8 people several months ago. It was a big hit. The ravioli turned out very well, and weren’t difficult at all.

Jim, because after asking all these good people for help I asked myself
what I had made for another Vegetarian about 10 years ago. And slowly my
mind came up with Pasta Primavera.
Yesterday I looked for my recipe which is from the 80’s. and made plans
to visit the Saturday Market in downtown St Pete and buy fresh asparagras
(probably from Mexico), mushrooms and the other ingredients.
Have not made it in 10 years but I still remember how good it was then.
