    Wife made some homemade pimiento (YES! it has TWO i’s in it) cheese

    I looked at a few recipes online and up here a mixture like it is often called “bar cheese”, regardless of whether or not pimientos are in it.

    One of my favourite non-pimiento and cheese spreads is Hall’s. It used to be that you could only get it at Hall’s on the River in Winchester, KY (and it was worth the trip for the spread and their great food). Fortunately they started packaging it and selling it locally when I lived in Lexington, KY. That made things a lot easier. Now that I have moved away from the area, I have been lucky enough to see them spread out to letting Sam’s Club distribute! This one’s a winner, if you like cheese spreads!

    We just had a Chicken Salad Chick franchise open here in McKinney, TX.

     

    One of their https://www.chickensaladchick.com/our-food/restaurant-menu ‘Southern specialties’ is pimiento cheese, something I have never had despite living in Virginia and Texas for the last 50 years. 

     

    I’ll give it a try.

    Wife made some homemade pimiento (YES! it has TWO i’s in it) cheese and bought some Ritz Sour Cream and Onion Chips to go with it.  Later as a snack I dragged out the Ritz Chips and slathered on some pimiento cheese.  Delicious!

    Spread it between two slices of white bread or toast for the best Southern sandwich around.

    Bread, crackers, celery….all are wonderful with homemade pimiento cheese!  Bring it on!

    Doesn’t sound like a classic pimiento and cheese. Looks like they’re going for more of a heated version. Usually it has a dash of cayenne in it, but I’m not sure about the pepper Jack. Let us know!

    I’ve been making my own pimiento cheese for several years now.   I uses fine grated sharp cheddar and home grown roasted red peppers ( marconi pepper and/or jalapeno peppers). 

    It pimiento cheese is really simple and extremely easy to make, just add extra spices or flavors to yours liking.   But the basic & simple cheese mayo and roasted pepper is tough to beat.
