    Add a mild roasted green chile pepper.  I think that it should have mayo. This is the same as when they add to it to their hotdogs.

    Try thinly sliced top round from a butcher and saute on a flat grill or iron fry pan instead of  shaved roast beef.

    Seeing as how you’re in AZ, I’d suggest replacing the pepper jack with some type of Mexican cheese, I’d suggest Queso manchego, Queso jalapeño or Queso chihuahua, or any combination thereof. I would also garnish the sandwiches with a sprinkle of Queso cotija.

    I think something similar to the Border Hopper burger at Augie’s Sports Grill in Goodyear,AZ might work:

    Border Hopper Our half pounder with bacon, pico de gallo, mild banana peppers slices, guacamole, and cheddar cheese.

    A Proclamation;
    Whereas there’s a very distinct possibility that AZ may secede from the Union and,
    Whereas the remaining 49 States may close their borders to AZ Residents and prohibit us from going to Philly.
    Therefore be it resolved that:——–
     
    AZ residents develop an alternate recipe to replace a Philly Cheesesteak!
     
    Since hearing the news today, I immediately began work on creating a Mexican Cheesesteak Sandwich!
    I started with a split Bolillo roll. Added thin slices of pepper jack cheese, Shaved roast beef, caramalized grilled onions and yellow mustard and a little salsa. Delicious!! OLAY![:D][8D]

    I’ve got a great recipe for bolillo rolls in case you don’t have a Mexican bakery near you or you just like to make your own bread and rolls. These can be tailored into different shapes of course.

    THANX! for the recipe. [8D]We have so many authentic Mexican Bakeries, ( Panaderia’s) in the PHX area that have wonderful breads and pasteries that it’s much easier to just go get them. I go crazy in a Mexican Bakery. Love it all![:p][:p]

    I’m sure others less fortunate, living in areas where they can’t get good bolillo’s will appreciate the recipe. I use Bolillo’s for all my sandwiches, hot dogs, hamburgers, BBQ etc because they’re so tasty and hold the food better.[:p][:p] Thanx for Sharing![8D]

    I need to get educated on Mexican Cheeses. I have trouble differentating them as to which ones go with what, the Spanish names throw me off. I don’t know how many times I stood at the cheese section at a Mexican supermarket trying to decide what to do. If anyone can give me a primer on these different types, I’d appreciate it. I guess I need to just start buying them and trying them out.
