    Ooooooh. Here’s some.

    1) Mashed potatoes and sauerkraut. Cut the liquid in your potatoes a little bit first.

    2) Colcannon; mashed potatoes with cabbage and onions. 6 lbs of potatoes and 2 medium onions per head of cabbage; or, 3 lbs of potatoes and half a head of cabbage per onion. Make the mashed as you always do, sautee the onions and cabbage with 1/4 lb of bacon and mix in.

    3) Add 2 lbs/1lb (depending on recipe size) of cooked ground beef to colcannon to make Bubble & Squeak (leave out the bacon).

    And, …!!!… not enough cream or butter   … too much water to cook in; only need enough to steam the potatoes done (soft) with little to no water left, not drown the potatoes; this keeps all the potato flavor;   … the addition of powered milk would be great to.
     
    How much butter & margarine to add?     Add an ‘UN-godly’ amount, then when you think it is right, add MORE. Then adjust consistency with milk.  I use equal parts butter & margarine.
     
    A few months ago I got a compliment on my mash potatoes from an old professional cook: “the best damn mash potatoes I every eat”  …[:D]…

    I’ve started "cheating" with my mashed potatoes. I usually don’t keep creamer, but have found that plain old non-dairy, non-flavored creamer works really well with my mashed potatoes. I like them a little on the chunky side, and usually mix in about 6 or 8 garlic cloves that I have boiled in the water with the potatoes. I enjoy them the most with meatloaf, swiss steak, chicken fried steak or chicken and gravy. Yummy!

    Philmash,try making the mashed potatoes with some sauteed bacon and onions.Add hot heavy cream to finish.

    Firstly, what a great board – there s heaps of good reading to be had here, to be sure.

    If I m ever going to eat sausages or bratwursts I would always want it to be served with mashed potato. I like a creamy mashed potatoes when I m eating sausages, but prefer a more savoury or spicy mashed potato with bratwursts. I ve actually got some of my favourite recipes on my blog.

    What s you re favourite mash  and what you prefer to eat it with. Where have you had your best mash?

    A newspaper story a few days ago told where to skimp a Thanksgiving. It said to use cheap russets, but lots of cream. I disagree. Russetts are better for baking. For mashed I like a potato that whips up with a waxy sheen. If they cost a little more, so what? They are still cheap, and a lot of folks in this thread would agree that the mashers are an important part of the meal. At Thanksgiving, I’d rather skimp with a frozen turkey than to have average mashed potatoes.

    Well, there was this dog, see. And he loved to dig in the dirt for potatoes because he really liked to have French fries with his beer. The dog’s name was Spuds McKenzie. So that’s how come potatoes are called Spuds.

    Let’s get this straight right now.
    Based on all the comments above, Mashed Potatoes are NOT a side dish!
    They are the Main Dish!
    Everything else served with them is a side dish.
    End of Discussion!!!!!
    SPUDS RULE!!!
    (BTW, where did the term “Spuds” come from?)

    Earlier in this thread, I mention a new variety of masher, “Huckleberry Gold”. I just dug some as baby new potatoes. I also dug, Red Gold, Purple Viking, and Red Norland. All are excellent, and have subtle differences, but the Huckleberry Gold is, IMO, not up to the hype……….. 
    Update, Labor Day weekend. The Huckleberry Golds are now mature (vice the baby new spuds that I reported on earlier).  The Huckleberry Golds, are indeed, uniquely delicious as mashed potatoes. I forsee a hit. They will not be in great supply for a few years, but if you see them, you should try them. Under my conditions, they don’t get very big, being about the same size as “Red Gold”. Those of you who hate to peel may see that as a disadvantage. I leave most of the skin on.

    it.  and when I am in a mood, I’ll swirl in some yellow mustard.
    Mashed potatoes goes with any meat I eat…any meat.
    It is the perfect side dish, and mix it corn, it is even better.

    Agnes…I don’t know if she has shared the recipe anywhere but the Christos lobster mashed potatoes are by Chef Mina Newman…a “Chopped Champion”
