Im a little late to help but cook low in Olive Oil,they cook great and carmelize..
Busy all day–barely kept up. Day 2 is tomorrow, Sunday, will prob be slower according to returnees to this event. Trying to maximize effectiveness by 86’ing slower more time consuming menu items and sticking with basic dogs..what do you think? Do you think grilled onions bring more patrons to your booth? Its so time-consuming…any tips on pre-cooking these and keeping warm without burning them?

I know this is late, but use a splash of Coke when sauteing the onions, that will caramelize them quickly and give it a nice flavor.
