I couldn’t find any of the gumbo threads I thought I remembered to tack this on to so, I’ll start a new post……
Sounds good to me.
Off topic: what is it with these food halls? Are they popping up everywhere? Sounds like upscale food courts aimed at foodies and people who want to be see and be seen
Food halls have become a thing in Philly too. Your description sits the one near my office very well. I wrote about it when it opened and went a few times, but I decided it’s too overpriced and too full of trendy foods rather than the old classics that I prefer.
I think you hit the nail on the head. This is like the chef-driven food truck fad of a decade ago, I guess. I thought it was a weird concept for Houston and noticed, without ever getting to one, a big turn-over rate for vendors. The first one, called the Conservatory, downtown, underground, has already closed, though it’s just reopening in another spot while another operator is taking over the original space. They attracted my favorite, under the radar Greek spot which had struggled for several years on the outskirts of downtown. They gave up after a few months and now are gone for good.
