Sounds good to me, I think you are on the right track. The manufacturer, I have heard of them, nothing bad, nothing good, just heard of them. But, there is not much to these units and parts are normally easy to get if needed.
I found a used griddle with a broiling tray underneath. I like the idea of this setup for keeping orders warm or melting/toasting items. Does anyone have any experience with this type of set up?
The model is a Rankin-Delux GB-36-C. It has 5 burners which leads me to believe I can have better control over the griddle area by being more precise with the heat. I’m more than likely going to buy it tomorrow unless I hear a reason why I should stay away from this type of setup.
Just make sure that it will actually act as a broiler/salamander.
I have a griddle that is part of a 6-burner/double oven unit,
it has slide-out broiler tray under the griddle & uses the flames
that are heating the griddle. Unfortunately, it would take 30 minutes to melt cheese in this thing, there is just not enough heat generated downward.
