Powdered gloves also would solve your problem.
I do like YOAman….tongs and tissue. On my very first gig the inspector came by as I was chopping peppers, with gloves on. He said I didn’t need gloves as the peppers were gonna be cooked.

Well, I now have one month under my belt as a hot dog vendor. The heat has really cranked up here in Birmingham, and I have noticed that the plastic disposable gloves are my nemesis. They are almost impossible to put on when my hands get a bit moist from sweat, or right after washing. The gloves were really slowing me down, but I did not want to ever serve a dog without a fresh pair of gloves for each customer. I want that reputation for running a clean cart operation.
Yesterday, my last customer offered an idea. She mentioned that she saw the folks at Subway putting on several gloves on each hand. After each customer, they take off the outer pair. They come off effortlessly!. When they get down to the last pair, they simply reload with several more pair per hand! So simple. I tried it after she left just to see how the method would work… she gets fee hot dogs next week!
This glove problem was really slowing me down, and had a definite impact on how many people I could serve during my lunch crush. A simple solution like this could seriously affect my bottom line. Try it yourselves and let me know how it works for you!

Problem solved! I use the cheap plastic gloves, but I keep a small shaker bottle filled with corn starch handy. I just give my hands a dusting, and the gloves slip on effortlessly.
YOAman, could you take a moment and describe in detail your no-gloves technique? A video would be great as well 🙂 I was thinking that the only time I touch any food is when I separate the buns, and open up the slice. I would love to go no-gloves. It’s damn hot here in Birmingham!
Yes…YOAman has got it Hotdogopolis….you don’t NEED gloves and you will save $ not having to buy them. Now, I’ll have some on the cart just in case…but using tongs and wax 12″ x 12″ wax paper (or boats…or whatever you use) doing things in the proper order you won’t ever touch any food.
I came up with a way that I did not have to touch the food so that I did not have to put on gloves to handle money. I use tongs ( I have a pair for everything) to even grab the buns from the bags and put them into the steamer, I use tongs to grab the dogs from the cooler into the boiler. Tongs for everything, and it seems to work great, though I do keep gloves on hand, just in case.

Seriously, I use a glove on the left hand, tongs in the right. All toppings have a spoon, tongs or ladle.
