    I had the calves liver tonight that I bought at Kuby’s. Perfecto!
    I fried the Vidalia onions with garlic in olive oil, dredged the delicate, pale slices of liver in flour and fried them lightly in the same oil. Just enough to put a light crust on the surface of the liver and still be a little pink inside.
    Ahh, With a green salad and a few glasses of Kistler Pinot Noir, I leaned back and sighed, all was well again.

    My mom used to makes calves liver occasionally. I only ate it with tomato sauce and onions or with ketchup, usually del monte.

    Thanks for asking. I was just about to post that I actually found calves liver at Kuby’s today.
    it WAS frozen but at least it was individualy vacum packed one portion to a package.
    I am defrosting them in the fridge for dinner tomorrow. Got some Vidalia onions
    too.

    Sorry, no HEB stores in Dallas (that I know of) They are out of Austin. They do have a "flagship" store in Dallas called, Central Market. Great store-shop there all the time. Only frozen beef liver! I will try "Kuby’s" today.

    I love fresh calves liver. Pan fried with thinly-sliced vidalia onions, but the onions have to be browned and even crisped the better. Plenty of fresh garlic laid on during last few minutes of cooking. I enjoy it most with a little 57 sauce on the side, and plenty of country fries. Tabasco to taste.

    I enjoy that calves liver and sweetbreads as mixed grill.

    Great for late breakfast or brunch with an over medium egg or two, English muffin or 100% whole wheat toast, or fresh sourdough. A few slices of ‘mater.

    The only thing I enjoy more is substitute lambs liver for calves liver. Very hard to find lambs liver anymore in supermarkets or even specialty meat markets. Same with kids liver, or goat even.

    [:D]I think there are HEB Grocery Stores in Dallas.They sell fresh calve or beef liver in
    containers,already sliced and cleaned. Guess though a butcher store might be your best bet.

    Come to think of it. I could also try, Kuby’s in Snider Plaza and Rudolph’s on Elm Street in Deep Ellum. Thanks again for shaking my old brain up. I forgot about Dallas’ specialty meat markets-precious few as they are.

    After watching (my hero) Mario Batali fry up some calves liver and onions the other day, I decided, that’s what I want for dinner! Whoa! Was I in for a surprise.
    Here I am Living in Dallas, Texas, The state that’s home to some of the largest cattle ranches in the US and I discover, much to my chagrin, you can’t buy a fresh piece of calves liver in any of the so-called "gourmet" supermarkets! I went to at least 5 (good) markets and found only, FROZEN beef liver! Are we all so spoiled that no one want’s to eat some organ "good eat’s"?
    Is there anyone else out there that craves something they grew up with like,
    calves liver and finds it impossible to buy in the area they now live?
