The sausage and chicken look great, but no gumbo shot? Guess I’ll just have to picture it in my mind. ;^)
What happened to the ham? Did it somehow become unsafe to eat or did it just not cure well?
Regarding the ham: I dropped it off at the butcher shop for the men to carve it and make it ready to plate – a few hours later the head man called and said it was “problematic” I asked if it should be chucked and he said “yes”
That was about it. Penn has a good reputation and I’ve served their meat before but there’s no way I’m going against the experts.
