Fascinating. I never knew!
So in the old days Entree was the equivalent of Appetizers of today as the 1st course while the cook got the rest of the order ready to serve.
Mmmm…who doesn’t love small birds in port wine sauce!
The reference to Kilburn’s in Rockford, IL has me intrigued. Google didn’t turn up much more than a couple of references to “Kilburn’s Dairy Restaurant”, but as Kilburn Ave. has been a major thoroughfare for many years I’ll bet there’s some sort of connection.
