Ooops…I meant to say, Thank You Roux for replying to Carla. This is her first post, and she is so proud of herself.

Further, El Parasol IS really good. The NYTimes mentioned them in a recent review. They are small take-out roadstands owned by their "parents" El Paragua in Espanola (a home of real, non-tourist NM foods including my beloved Joann’s Ranch-o-Casadas, Matilda’s and closest larger town to Chimayo/Rancho de Chimayo)

hello i’m teenage daughter of nynm, Carla aka Two Rivers. As you probably might know, we always go to Santa Fe,New Mexico and we always go to this place called El Parasol:famous mexican food it’s in Santa Fe, Pojoaque,Espanola, and Los Alamos.Anyway, they make the best bean chile and cheese burritos (They also make vegetarian too),Encarnitas, tacos,Enchiladas, green chile stew, they’ll ask you ether green or red or christmas (both) chile to have in your food. it’s just freakishly, delishiously tasty.if you’ve ever been there or in ether of the places where El Parasol is that i’ve just mentioned you’d probably agree with me.And, if you have’nt, i’d recommend it very much if you go to New Mexico.ADIOS CHICAS Y CHICOS.
