Wow!! Some excellent recipes, and I am always on the lookout for something that’s easy. Thanks so much.
Went to a client’s holiday party at a nice place in Harvard Sq. in Cambridge, MA and one of the finger-foods they were passing around was Phyllo cups filled w/ carmelized shallots & bleu cheese. If given the opportunity, I would’ve had 3 dozen of them. They were quite good.
I had to go to 4 stores this year to finally find the Athenos filo cups.
I fill them with
brie and caramelized onions
goat cheese and a little cream cheese mixed together, then topped with mushroom duxelles
Mr Ed Simon’s caterer used them to make delicious little wuiches at his wedding.

My sister always puts on a great Christmas eve party for her extended family. She always does a great job, so I like to bring a few nice things. Rather than bring the same ole, I wanted to surprise and was on the lookout for ideas in early December. I saw an end cap display of little filo dough cups (pre cooked) by a company that makes a nice frozen filo dough. There were 15 little cups per package. Based on a picture on the package, in each cup, I put about 1/8 teaspoon of mayonaise flavored with Old Bay seasoning. I then added a small rolled piece of smoked salmon. I had previously blanched and chilled some fresh, thin, stalks of asparagus. I cut the tip off the green asparagus and propped it up like a mini Christmas tree. Chopped up bits of asparagus, and the mayo held the base of the tip in place. It was easy and not too expensive. It was served at room temp, so it didn’t take scarce oven space to heat. 15 x 2 shells was $7, The asparagus $5, (with a few stems and 1 tip left over), the salmon about $5, and the mayo almost nothing (although there are some pros here who could figure it), so the final product was under 60 cents each. It was a hit with my sister and the guests.
I saw the cups for sale that one time only. Maybe it was a test?? I’ll be on the lookout for them next year.
