    Easy Chicken Noodle Soul Soup

    Here is an easy to do Chicken Noodle Soup I have developed with a soul twist. I love it for its simplicity and the use of commonly found ingredients. You don’t even have to own a stove to do this soup. Better yet, you don’t have to wash any dishes either. This is part of my ongoing project to develop a microwave cookbook using a minimal amount of inexpensive and commonly available ingredients:

    Equipment Used:

    Microwave oven
    One Hefty EZ Ovenware 10 X 5.5 Deep Oblong Casserole Pan
    One 64 ounce disposable microwave deep dish container
    Assorted plastic tableware
    20 ounce Dixie Ultra paper bowls

    Ingredients:

    One pound fresh boneless chicken breast
    One can low sodium chicken broth
    Half of a box of Barilla Cellentani
    One can Sylvia’s collard greens
    Water

    Method:

    Measure out half of a box of the pasta into the 64 ounce container. Fill half way with water. microwave on high uncovered for 10 minutes. Stir. Microwave another 6 minutes, cover and set aside.

    Place chicken into the Hefty Casserole Pan. Microwave on medium-high for 5 minutes. Turn and microwave 5 minutes on medium-high. Cut chicken into bite sized pieces with plastic knife right in the Hefty pan.

    Drain pasta and add cut up chicken into 64 ounce container. Add chicken broth and Sylvia’s collard greens. Stir and mix all ingredients

    Microwave on medium for 10 minutes. Serve in paper bowls.

    I find this soup very delicious, simple to make and quite hearty. I like a lot of pasta in it, use less if you desire a lighter result. Use conventional cookware if you are a fan of dishwashing. It will save you money. I would advise against using anything other than Sylvia’s Collard Greens as this is the ingredient which adds the soul to the soup.
