That’s a tough one jsjkr but I’m sure somebody here can steer you right. Just a couple of thoughts…
1) you have 12bones in asheville and they serve a pulled pork that is not eastern (whole hog) so it is a little dry but at least they don’t sauce it so you are free to do whatever you think will make it taste best.
2) I found Big Mountain BBQ in Waynesville to have the best sandwich in our last bbq run into western nc. I’m not big on western nc style que (I can eat some like Lexington #1 when I need a fix but I certainly wouldn’t rate any of it in the top 10 plates or sandwiches I’ve eaten). Big Mountains pulled pork wasn’t as dry as most western que and they had an excellent selection of home made sauces including a very nice eastern style. here is their website: http://www.bigmountainbbq.com/
I’d like to get back over there in the next few months and try out another 5 or 6 que places so if you find something that fits your post please report back.
