I have been making just one pie mostly for the two of us. Going on a road trip to a family gathering and taking four frozen dough balls. I want the family to be able to sit at the table and consume the pies together. However, there will be just one stone, a screen and a conventional gas oven. In my oven (electric) it takes about 4 minutes to do the bottom of the pie and another 1-2 minutes under the broiler element to complete the crust and top. My thinking is to do the bottoms of all four pies first and after the last is done do the tops one at a time for finish. This means that the first pie done on the bottom will be out on the counter for about 12 minutes before going back in for the broiler and ultimately about 20 minutes before it gets to the table. Will this process work and will there be any meaningful diminution in quality of these pies for being so delayed in consumption?
I’m not a baker of any sort so I was not able to offer any tips.
