youll need to be concerned about everything including low voltage stuff like lights. electric motors pull more on startup than running as well as all compressors for refrigeration. if your fryers and steamers are electric, also more on startup but if you dont throw a breaker at startup, cycling wont be an issue.
 
docs suggestion of waiting a cpl pf mins is also a good idea but unless fryers are electric, i wouldnt worry about it unless throwing breakers.

There are a variety of power meters for reading how many amps your equipment is using, they are sold at most big box stores and hardware stores.

If you want to whack off some amps from the usage side go to a propane water heater.

Who ever told you that is wrong you have room to spare. Is your truck plugged in at home at night? If so your coolers and freezer are both at temp. And your GE water heater ( electric ) is hot. Now if everything were off for 12 hours and you fired it all up at once you’ll have a surge in power usage, but you should still be ok, close but ok.
 
Who ever this person was didn’t know your total amps usage  or something. Was it just a guess on his part? I think your worried about nothing although lets see what others think.

I’m not sure I understand your question, but by Steamers do you mean steam tables? If so they will kick on and off but will draw far more on initial start up than at any other point in your work day.  If you concerned about surges in your usage start one item and wait 10 or 15 minutes before you turn on your next big power using item. I wouldn’t think a generator being capable of producing more power than you need could ever be a problem. It’s the other way around that kills a generator.
