This question really needs to be answered by your local health department.
What FOOD prep has to be done at commissary and what can be done on trailer?
Trailer will be complete NSF kitchen with refridge, freezer, sinks,everything.

If you are permitted as a mobile kitchen, then you can do all you prep & cooking in the Trailer. … It’s been a while since I looked at Georgia’s food codes. These have changed a few years ago.

Yeah I know. I talked to her Friday for an hour and I’m going back Monday. Just never got to this subject. Was just wondering about everyone’s experiences.
Our health dept told me if I could re figure our truck layout to include a prep sink, our truck would qualify in the state of ohio as our permanent commissary.
1) prep sink
1) hand was sink
Triple sanitation sink
Passed with flying colors
Commissary Prep?
