    Thanks for the recipes roossy. I’ve been a fan of Naturally Fresh Creamy Cilantro Dressing but I can’t use it up before it goes bad. When I was doing Atkins (and I’m following some of those principles these days again) I found it went well with canned salmon for a quick snack. Works with tuna, too, but much better with salmon.

    Two of my favorite ways is to use lots of cilantro in potato salad, instead of parsley.

    The 2nd is for Thanksgiving I have an additional hot/sweet cranberry sauce for the table in addition to the classic plain cranberry JELLY I love:

    1 can whole berry cranberry sauce
    1 jalapeno minced
    1/2 cup cilantro minced
    1 shallot minced

    Mix together well, chill for a few hours or make the day before.Place in a nice bowl for your Thanksgiving table. Delicious.

    Why not just put the butter mix in something like a narrow casserole dish? Drop the corn in and roll..

    Well Papa Joe, not nearly as exciting as Roossy’s Rec. but I took 1/2 cup of butter and added 1/2 a bunch of minced cilantro, and the zest of 1 lime. Then I added some fresh ground black pepper and freshly ground sea salt. Whipped it all together with a wooden spoon and dropped rounded teaspoons of it on a wax paper lined plate. Then I put the plate in the freezer for about 15mins so I could put a firm blob of butter on each roasted cob.

    Thanks for the recipes Roossy90! I love cilantro and just made some wicked Cilantro lime butter which I served on roasted corn this past weekend. Can’t wait to try your recipes though!
