Although it doesn’t fit your small joint preference, Lambert’s, home of the throwed rolls, reviewed and endlessly discussed here has a location in Ozark, just outside Springfield Missouri. It’s on US Highway 65, just 11 miles south of I-44. I know I would make the side trip. Their web site is: http://www.throwedrolls.com/ozark.html

Eat well and cheaply in St. Louis. Go to the Hill (an old, very historic Italian neighborhood). Get off the Kingshighway exit on I-44. Go to Cunetto’s and Bartolino’s for pasta and Amighetti’s for monster subs and fresh-basked Italian bread. Ted Drewes frozen custard is a short drive away on Chippewa.
You are only going to drive in Texas some 70+ miles but if you do want to detour try Clark’s Outpost in Tioga. It is 16.7 miles east of I-35 and is reviewed by Michael Stern in his Texas section.

Heading from west suburbs to Dallas area in November. Am taking 55 through Springfield, IL to St. Louis, 44 West through Tulsa through Oklahoma City, and then 35 South down to Dallas.
Looking for small joint type places to get in and of fairly quickly.
