In PA, allowed to cook raw meat. never use precooked garbage and the same with my peppers and onions. All cooked on the cart. Cost doesn’t matter to you, I am asking what you think it would sell for. What’s the going price, $5 $6 $7
And why is this not a cheesesteak, Chefbuba/ChrisOC? Grilled steak, cheese, peppers n onions….. I’ve seen shows where those steak places hold their meat in au jus & I’ve seen it sitting in a pile on top of the griddle, drying out. So?

Well I asked the HD when I started 5 years ago and he said, “you can cook whatever you want just so it is on the grill of the cart.” Codes vary by state, wilddogs and I am servsafe certfd. 6oz sirloin grilled to order, topped w/provolone, pepps n onions on a nice hearth baked roll cost $2.32, sell for $6. Advanced has some pretty good precooked stuff. My HD inspector really liked it.
I assume that you can’t have raw meat on your dog cart, so you would be buying sliced, pre cooked roast beef? Then hold it in aujus? Then add pre cooked peppers & onions?…….Stick to the dogs, that’s what I would be going to a hot dog cart for, not a bastardized cheese steak.
As far as cost, what does it cost you to make? What would your market bare?
That sounds like a very good sandwich, but not what I would expect if I ordered a cheesesteak.
I want to sell cheesesteaks off my dog cart. I’m thinking of grilling the sliced sirloin and keeping it hot in an au jus bath. Grill is not big enough or hot enough to cook-to-order. Placing a 1/4lb meat w/sharp provolone and grilled peppers n onions on a beautiful 7″ crusty roll made by local bakery. Any suggestions on a retail price?

HAHAHA, i’d like to meet the health inspector who says you can HOLD raw meat on a hot dog cart… FOR ONE, you WILL NOT & CAN NOT get a HIGH PRIORITY license for an OPEN AIR hot dog cart. You won’t have the ability to keep it at 42 degrees or lower, unless you have a refrigeration unit on your cart, a triple sink + a hand washing sink, and serv safe cert as well. but non of that is relevent, b’/c it’s a hot dog cart…. I’m going to call the Health Dept in Hastings tomorrow and ask if they allow raw red meat on a hot dog cart.
Do your homework and research what sells in your area.

The original Cheesesteak was made with cheese whiz, which is why I mentioned it. I am all about keeping it authentic, just doing it better than the other guys
Maybe I should call it a steak n cheese? Cheese wiz just sounds bad to me. (but I’m sure it no better or worse than the nacho cheese sauce in a can) I’d rather sell real cheese to the public and I don’t think a sirloin steak n cheese from a food cart would give anyone a bad rep. This sounds more like an Italian Beef Minus the giardiniera + some cheese. If your in PA and you want to do a Cheesesteak, why not do a proper cheesesteak? Use the cheese whiz. Not trying to come at you, but it is stuff like this that gives food carts a bad rep and make people think they will get substandard food at one. Just saying

Why it will often not be considered a cheesesteak is that over the years the term cheesesteak has and will be related to the concept of Philadelphia cheesesteak. There are a few exceptions. I have a lifetime of experience with one cheesesteak that is different than a Philadelphia cheesesteak but Piccolo’s in Hoboken has been serving a <<<Hoboken>>> cheesesteak for over 50 years and I dare someone to get yappy at Piccolo’s about the cheesesteak served there.
You’re in PA where customers are very likely to expect an authentic version of a Philadelphia cheesesteak.
If regs in PA allowed raw meat to be served from a standard hot dog cart…I’d think there would be droves of them all over PA.
There are some carts in NYC that serve cheesesteaks but they are not serving them from hot dog carts….and they use pre-cooked meat.
