Another thing to consider is your pivot radius and tongue length. If you add stuff to the tongue, you might consider lengthening it by the same distance as you’re using up.
Those little trailers jack-knife easily when backing up, or turning sharply.
Noticed that issue later after posting. Cooler really needs to sit, like you said, in the middle.
I would give consideration to the weight of your cooler for it’s placement on your rig. Having it where you do would be pretty convenient for serving purposes, but I’m not sure you’d want to haul it there. My loaded drink cooler is rather heavy. If it was more centered on the cart, the cart would probably pull fine, but it might not if it was that far forward and to the right. Food for thought….
I don’t believe it is important to have propane tanks close to burners. my propane is in front and burners in rear.
You need two burners if you are going to have a steam pan and a hot water pan for cooking HDs. Hot water cooking HDs and steam to warm buns, & consignments.
Just make sure your water pan for steam will fit std hotel pans and there is plenty of room to vent gas & hot air. I don’t see that you need two separate burner boxes, but that depends on your arrangement. Many carts only have one burner box with as many as 3 burners.

Primarily I plan to do hot dogs and some sort of sausage. I thought having the cooler where it is so that It’s easily accessible to me to provide the customer a drink. Yes the HD will be involved.
BTW, the cart is being built on a 40×49 trailer.
Wouldn’t you want your propane on the same side as your burners and grill?? It’s not overkill if it meets your present and future needs. Asking us is a moot point since we don’t know what those needs are and may be. But be reminded your HD will be interested in seeing your plans. DD
I’m working on my cart plans and was going to do a dual burner setup but wondering if it’s overkill. Two seperate burner boxes. Here is a rough drawing of what I have thought of. What do you think?

What pan arrangement are you planning on using with the burner box dimensions shown? ….. Looks like what you show will only hold 1 full hotel pan each. … Most carts will hold 2 full hotel pans in one box and the 21 3/4 dimension is turn the other way. The different pan arrangements that you might be using will be the key to the burner box size. …. I’m sure the pans might change depending on what you are selling. You may be restricting yourself here.
