    I love your videos and have become a devoted fan. You are breaking new ground in culinary media in many ways. You are both highly informative and entertaining as well.

    I am amazed at the amount of videos you have on You Tube. I am trying to make my way through them all.

    I haven’t noticed you promoting your You Tube videos that much here so please allow me to do so.

    Howdy all,
    For who want to make cajun/creole dish’s here are some substitute items that can be used if cajun items are unavalible to you.’
    This has been requested by fan’s in PM’s & emails:

    Tasso = use smoked bacon or smoked ham
    Don’t use honey ham, sugar or maple cured bacon

    Aundoilli sausage = use any good real hardwood smoked sausage
    Don’t use a sausage that says smoke flavor added

    Crawfish = use shrimp

    Tonys seasoning = use seasonall & add some cayeen & garlic powder

    French bread = Cuban bread or Hoggies

    The following have no substitutes that a cajun would use… sorry
    Boudin, Wine, Garlic & Butter.

    A clarification on My cooking videos,

    I do them to show the steps & procedure’s for cooking cajun, creole & southern style dishes in a home kitchen.

    The finished plated food are merely shown so yall can see how we assembe & combine the food we eat on our plate. It is not intended to be a photo contest for "The best looking plate award"

    When I have lots of company over for a meal I use disposable plates, glasses & utinsles. My dishwasher is’nt a large commercial unit.
