Getting ready to build the burner box. How deep is this box on most carts, 8″? I thought 8″ and then you would use 6″ spillage pans for the water. Am I on the right track?
I plan on using grill burners if it matters.
I built EZ cart. The burner box is actually built above the 2 burner stove. The stove is not in the box. The actual box is only 7 1/2″ down from top of cart, with an additional 3/8″ up when you pet the air strip on top. This leaves about 1 1/4″ between burner head and spill pan which works well for me. I thought about using 6″ deep spillage pans to hold water and then 4″ deep pans inside of that. I was not planning on doing dirty water dogs but cooking them on a grill or flat top and then holding then in one of my pans. I am planning on steaming buns.
So it sounds like a rule of thumb then is between 4″ to 6″ from the top of the burner to the bottom of the pan. I measured my home gas grill and the top of the burner is 3″ from the cooking grates so I guess 4″ might be a good start.
are you doing the EZcart? 8 inches does seem a little short.
8 inched is rather short. 6 inch deep hotel pan will leave only 2 inched to mount the burner. I don’t think the flame will burn correctly without smoking up the pans, …. If it will burn at all.

4. .. Are you going to use a water pan for steam? … Are you going to build this pan (much cheaper) or buy a big hotel pan? …. ???? …..
I think you should be looking at about 14 to 16 inches deep. … You might get by with 12.
