I started serving breakfast a couple of months ago, some good days, some bad. I’m in a small town, people are slow to change or “experiment”….word of mouth is the best seller.
My first 3 customers yesterday were all first timers that were told that they have to get a breakfast burrito and biscuits & gravy from me.
Burritos are a pound +…3 eggs, potatoes, cheese and choice of ham, bacon, sausage or chorizo in a 14” tortilla….Fresh fire roasted salsa on the side.
Biscuits & gravy better than any other place in town, made with lots of sausage and 1/2 & 1/2.
27% food cost on both.
I guess what your saying is, you have a grill, fryer and so on. Breakfast burritos and sandwiches will hold well. The brown and serve country sausage works well in our breakfast sandwiches. The liquid eggs have citric acid so they hold real well in a steam table. I don’t realty know if it matters if anyone else serves breakfast, it only matters that your customers are requesting it, every area is different and has different needs…………….The best……………..BillyB
I have another ? [:I], Things are finally starting to pick up for me and now i am getting requests to serve breakfast. I need to hear from anyone that is doing this and if its working. i priced what the cost/profits would be and actually its a bigger profit margin. But again …has anyone had any success with breakfast AND lunch. i want to hear all good vs bad. pls help me out here! F.Y.I.–I do have a concession wagon so i have the capability.
12 oz of coffee fits into a 16 oz cup with room for creamer/sweetener and stirring. Our 16 oz cup sells for $1.75. We will add an 8 oz cup (6 oz liquid) for $1 as it cools off here for coffee and hot cocoa. We have no problem with the auction folks buying the coffee but here in Socorro it hardly moves.
Chefbubba… thanks. I hate going with styrofoam (takes up so much space on the cart) but we might decide to do that. We have various folks on the street ask about breakfast stuff all the time (like the coffee) but I worry about putting it on and it turns out like the coffee. But then I still think most of the folks in Socorro can’t read.
Went to Sams and got 1000 styro 16oz cup & lids for roughly 27.00. Very good deal!! i’ll put 12oz coffee and i’ll have room for the creamer etc. –thx for the idea Lorna! i’ll store enough cups daily and add as needed so i dont get too crowded. And also got 5 x 5 stryo 250 ct for 12.00, i think 2 bis/gravy w sausage should fit as well as a breakfast bagel.
KBB… I would go with a 12 oz coffee if your only going to get a buck for it. Bigger cup cost more, more coffee, more sweetner, creamer…all more $$
Thanks for all the info! I really want to keep bfast simple and quick, im in a pkg lot where the locals tend to park and ride and the town atm is right in the center. I am looking at doing a 3.00- bfast sandwich/wrap (thx for the recipe ideas ) and a 3.00- 2 biscuits/gravy with 2 sausage links, with coffee for both so theres really no guess work or price haggling just in and out. As for pkg-ing Sams has 100pk for 9.88 so im at .10 for that they do have a large sandwich box which has 250 for 10.00 so this is perfect as well has to take 1 more look before i decide- dont want to cram it in a tiny box either! is up charging for the coffee (20oz cupw/ lid) to 4.00 a bad move or do i keep in all in the 3.00 price ?
Chefbuba thats pretty good for cost. We make our gravy from a local sausage/butcher.
Just inquiring here. When we do breakfast does anyone here do milk. We stock and sell out, seems there are more milk drinkers than we thought.
We use heat leftover Hashbrowns, eggs, omelets, sausage, and ham and scoop on a 6″ tortilla with a handful of shredded cheddar and wrap in a foil wrap. We sell them for $1.50 and sell about 50 in 1.5 hrs. WE hold them on our glider/warmer, people walk by and grab what they want. We never haven’t had to throw any breakfast items away. We have a 25% food cost on the Breakfast burrito…………….BillyB

No body makes a decent biscuit here in NM! I keep telling them at Cracker Barrel that they need to send someone out from TN to show them HOW to make a decent biscuit out here! We haven’t had a decent biscuit since we last ate one in Shreveport! That’s been over a year now and my family is hollaring for me to bake biscuits… from scratch![:0]
What type of container are you serving your Biscuits-n-gravy in? We looked into it but container costs were putting our selling costs too high (shipping costs is killing us). I’m not sure we could figure out a place to put another hot food at on the cart. We are maxing out the poor thing as it is now.

2 biscuits split in half and about a cup of gravy fills it up for $3.75
In our area, there are many B & M restaurants that are only open for Breakfast & Lunch and they’re making money.
Open at 6AM, close at 2-2:30PM. Most of them do a bigger breakfast than they do lunch. They serve breakfast all the time they’re open. A lot will depend on your traffic pattern and location.
This is a No Brainer! You have the equipment. Your customers are asking for it. The only question is do you have the desire to do it right, and put in the time, investment and effort????
If it doesn’t make a profit after you give it a “Best Effort” then just go back to whats been working for you.
The auction folks are the ones who ask for the extra stuff mostly. They are why we put the coffee/cocoa on and make the breakfast. They know what they want and are tickled that we try to fill their requests. It is mostly the same group of auction goers and act like a big family group. We seem to have been adopted in. It’s surprising how many people see the cart in other towns and know we work the auctions for that particular auction house.
How are you making your cocoa? How do you heat the milk and keep it hot?

I sell about 6 gal on Saturdays at the kids soccer games.
