    I just purchased a steamer. I let some dogs steam for 15 mins and the rest steam for 10 hrs. The 10 hr dogs tasted just as good as the 15 min dogs.

    My preference is Sabrett natural casing in hot (not boiling) water.

    depends on your area. and the brand of hound you use. some will sit all day in water, some will split or come apart if left in water too long. some people boil from frozzen to ready, then put them in a steam pan for holding.

    Which one appeals more to the customers? Just wondering. or is it the same thing? Doing all the research I can before opening one up.

    I throw buns on top of the dogs in a steam pan all the time. It just takes a few seconds when the pan is really steaming when the buns are naked. I grill my Nathans and store them in the steam pan.
     
    I even wrap a few buns in my foil wrappers and put them in the steam pan if I see a few people starting over to my cart. That works good too. They can stay a bit longer in the steamer pan when wrapped in the foil sheets that I use from Sam’s Club.
     
    In the wrapper they are not taking in all the moisture as they do when naked. When naked you have to watch them closer because they will get soggy and even stick to the metal pan. I try to put them on top of the dogs when naked to avoid them from touching the metal and sticking to the pan.

    Buns and dogs in the same pan?  I’ve never heard of it…

    I’ve decided to steam my dogs. I have a second question, is it okay to steam dogs and buns in the same pan? Only throwing buns in there a few at a time or maybe only when they order. (If anyone knows how long a bun should be steamed for before serving, that’ll be nice as well.)

    Do something no one else is.
    put a wok on your cart.
    and soon they will call you the dog wokker.

    either boiled too long or not a good boiling frank.
    I like vienna beef myself. was at thier presentaion at restaurant depot last year. good dog, fine dog.

    I just dislike steamed and boiled franks.

    I made the mistake of ordering franks and beans during lunch at a local area diner yesterday. The franks had been boiled, making them virtually inedible, as far as I’m concerned.
