Oh buddy I am ALL about KISS.

That is what I am afraid of. Too many choices etc.

I have a BBQ "catering" biz, my personally philosphy is KISS.

I keep the menu down to the basics

I have it set up where the customer can choose from 6 meats, 10 side dish, 4 salads & 4 desserts (2 hot and 2 cold)
I also offer coffee, iced tea and lemonade

Over the years I have built up my catering supplies

You will need to think about a menu, before progressing much further.
Your menu will determine what you need equipment wise and how many of each.

I have a local lil pizza shop here in Nashville TN. I am trying to get into the catering realm.
