    King Arthur’s Italian style isn’t a true "00" flour, but rather a "clone" asstated. Their Sir Lancelot is another that is sometimes substituted when making pizza dough. pb

    Semolina is a completely different flour than 00. Semolina is the consistency of cornmeal while 00 is a very fine grind. The 00 is what’s used in Italy to produce fresh pasta with a silky texture.

    Does anyone know the best place in Philly to get 25# or 50# bags of Italian 00 flour? The Restaurant Depot doesn’t carry it.
