I was looking at the http://thefarmersdaughterllc.com/homemade-side/5211355 side dish menu for The Farmer’s Daughter in Urbana, OH and noticed that one of the items is “Beets & Egg”, which is something I’ve never heard of. Does anyone know if this is some sort of regional/cultural specialty?
I still make them occasionally.
My dad used to make them when I was still young. I didn’t care for the beets, the eggs were what I was always after.
I eat them when I go to Philippe’s.

My wife just made a batch of these- which we always called ‘Red Beet Eggs’ for our church picnic tommorow afternoon
She cheats a little- buying pickled red beet juice from an Amish Farmstand we frequent
