Haggis is a Scottish delicacy, an acquired taste for sure, made from the stomach, heart, and liver of a sheep, suet, oatmeal, and assorted spices.
Being from Tennessee, I am not sure what the Haggis burger is?
By the questions ask regarding stomachs, Is it offal?

Without the intestines (and I assume the stomache?) What is left…oatmeal?
I like the little sprinkling of sprouts![:D] Makes it truely look like it had just been scooped up from the pasture.[:D][}:)] Or was that an attempt to make the meal healthy[?]

In a few days the Smithsonian will kick off its annual 2-week long Folklife Fesival on the Mall in DC. Each year the festival celebrates 3 regions and/or countries that have contributed to our cultural blend. The focus is on food, music, art, storytelling, craftsmanship, etc. Naturally the food kiosks are the biggest draw, as people line up in droves to sample foods of the featured areas. This year celebrates Appalachia, Scotland, and Mali. The menus printed in the paper this morning list lots of tempting dishes, none more so than the aforementioned haggis burger.
