    Awww man you are killing me! I had surgery yesterday (16 teeth pulled!) and will be on a liquid diet for the next week. This time I’m drooling from more than Novocaine lol

    Well it’s the day before I leave for the Gumbo contest, and the weather here SUX!!!

    Freezing rain, sleet and snow [V], thank goodness the farther we go south the warmer it is.

    I will post pictures from the precook and contest as they come.

    I pulled this out of the smoker this morning.
    12 lbs, smoked 9 hours 15 minutes, using apple wood, rubbed with a cajun seasoning

    Tender and delicious!

    All my meat preparations have been made, Smoked Turkey (5 lbs), Andouille (6 lbs), freshly rendered lard to make my roux with, and 4 gallons of smoked turkkey stock.

    I will buy the vegetables when I get down there (woohoo a trip to Piggly Wiggly [:D])

    So Adj, BhamBabe, Bruce yall coming down??

    I have always said MB and that area is AWESOME!

    Awesome shots of St Joe St Park, it is so beautiful out there. In Feb there probably are several spots in the park to pick from.

    I have a friend that stays a weekend in the cabins, right there facing the bay. The cabins are quaint and are perfect for a stay.

    My dad and I take his boat and fish off the bay side of the peninsula, great spot for sharks that is only about 100 feet from the beach. [V]

    Yes, watch out for Alligator and Bear. I have seen both while down there. Gator’s right there in MB, and the bear up the road heading towards Wewa, near the Overstreet Area.

    If you can find the time to come down that weekend, It will be a great weekend.

    Saturday Night is St Andrew’s Mardi Gras Parade too. (not quite as exciting as NOLA, but not too bad either)

    Did anyone mention that Mexico Beach is awesome! And if you like to camp, there is no better camping spot in the entire world than St. Joe’s Peninsula State Park. Shhhhhhh, don’t tell anyone.

    I gotta find a way to take a three day vacation that weekend and head on down. If St. Joe’s is full, there is another state park nearby.

    Here we see my wonderful son modeling the hat for us.

    Needless to say he was not impressed that I made him model it.

    Oneiron it is the same weekend you all will be gorging yourselves on BBQ and sausages (2-17-07)

    I will be arriving in Mexico Beach, around 7pm on the 13th or 14th.

    My week is fairly open, except Friday/Saturday (gotta cook the gumbo)

    ADJ, if you can’t make it down maybe lunch/dinner somewhere in LA (Lower Alabama)

    Last year we all had Jimmy Buffett’s "I will play for Gumbo" aprons

    This year I have I think we will use the gumbo gator apron again, but i am having special Mardi Gras colored chefs hats made. I got one the other day and my son did not take it off the whole day.
