JB, good to see you back cookin! I was beginning to wonder if the "Coonass Taliban" commandeered your culinary services!
Now down to business. That speckled bean you showed us is, in my opinion, an Anasizi(the old people) bean. These beans are buttery delicious! Our neighbors to the north, in Dove Creek, Colorado grow the best! Their website is http://www.anasazibeans.com.
Now, the water thing. Living at an elevation of more than 5400 feet and having a hard but good water source, most people around here cook beans in distilled water. If you like to chew on marbles, you should use non-distilled water.
