Mashed Potatoes

On the roster of comfort foods, mashed potatoes are right up there with mac & cheese and ice cream by the pint. Boiled russets, mashed with butter and maybe some cream, salt and pepper, plated hot enough that a pat or two of butter on top starts melting right away, are just about any meat’s best companion. They can be dolled up in all sorts of ways – by adding garlic, sour cream, cheese, or herbs – and with most meats that want gravy, gravy is welcome on the potatoes, too.
