Scholl Bros Bar-B-Que

East Texas is not known for terrific BBQ. Scholl Bros. is an exception. It is hard not to love a place with the motto “You need no teef to eat Scholl Bros. beef.”
This is the real deal: a big pile of wood out back, brisket smoke-cooked here, sliced when ordered and utterly delicious. You can get it sliced or chopped. It comes with the de rigueur slice of absorbent white bread to sop up juice, a jalapeno pepper, and a slice of onion. For something different, check out the “Troy Built.” That is a large bowl of pintos with a mound of chopped BBQ beef on it, hot links on the beef, and sauce and cheese over everything. Perfection!
If you get Scholl Bros.’ very nice ribs, be sure to order potato casserole on the side. It is a real belly bomb and rich beyond belief.
