The Johnson Family Comes To Lafayette

The Johnson family has been serving Cajun boudin and other meats since 1937. The business originated as the Johnson’s Grocery in Eunice, closed in 2005, and then reopened a couple of years later in Lafayette. They opened it because they couldn’t find any respectable boudin near their new home. Lori Johnson Walls and her husband Greg carried on the family tradition.

Why We Love Boudin

Boudin reflects Roadfood at its best. You will find it in butcheries, convenience stores, gas stations and small shacks throughout Cajun country. No single producer dominates. Local families and small butcher shops produce it. Some create traditional boudin — pork + rice. Some make less common varieties, such as crawfish boudin. Locals show great loaylty to their nearby provider. They embraced Johnson’s Boucaniere quickly when it came to Lafayette.

Johnson’s boudin consists of a balanced blend of rice, Boston butt pork, and liver. Plus, of course, they include onions and bell and red pepper for seasoning.

How To Eat Boudin

I prefer to cut the casing in half and squeeze the boudin filling into my mouth. Others don’t mind chomping right into the link whole. The tender bits of smoked pork balance so well with the rice and the red pepper. It leaves a warm afterglow in the mouth – just enough heat to require a nearby beverage.

The Parrain Special

Johnson’s used to serve its signature Parrain Special only on Saturdays. Now you can eat it every day. They named to honor Bob Carriker, the foremost authority on Cajun boudin and creator of boudinlink.com. This inspired creation is a stuffed grilled cheese with crumbled boudin balls and BBQ sauce in the center. If the Cajuns were to create a cheesesteak – this would be it. The flat sandwich perfectly balances meat, cheese and enough red peppers to line your mouth with heat. You can only experience this at Johnson’s Boucaniere.
