Fincher’s Barbecue
Review by: Michael Stern
What to eat at Fincher’s Barbecue in Macon, GA
Fincher’s is all about the pig. In fact, its featured sandwich is named Pig: pulled and chopped pork, well sauced, on a bun. And there’s Super Pig, which is the same thing, but bigger. The smoke-cooked pork also is available on a plate (either pulled or a combo of pulled and chopped) along with such immemorial side dishes as Brunswick stew, turnip greens, fried okra, baked beans, green beans, cheese grits, and cole slaw.
It’s all good — Georgia classics — but what makes a meal here special is Fincher’s sauce, a saffron-shaded potion that is sweet and peppery with a mustard twang not unlike South Carolina sauce. It doesn’t overwhelm the pork but it is a significant presence on sandwich or plate or as a glaze for St. Louis style ribs or smoky chicken.
A local favorite since 1935, Fincher’s has an expanded menu to please BBQÂ frowners: burgers, catfish, even salads (that are available crowned with BBQ pork or chicken). The Houston Road location is the original store. There are three other Fincher’s in the Macon area.
