Bailey’s Smokehouse

Bailey’s Smokehouse is fantastic barbecue right in the NYC metropolitan area! Located in the heart of Rockland County, Bailey’s Smokehouse is a gem situated in Blauvelt, NY, and features topnotch barbecue. The smoker is run by no other than Dave “Fink” Finkelstein, previously of Stickey’s (Teaneck) and Fink’s Funky Chicken and Ribs (River Edge). Fink has partnered with Bailey’s Blauvelt Inn to form Bailey’s Smokehouse. The barbecue is smoked using a Southern Pride smoker, and cherry wood.
Upstairs has the typical bar-restaurant atmosphere: a bar in one half, dining area in the other, and TVs everywhere. The basement has been transformed into a dining hall, but the action is definitely upstairs.
What should I eat at Bailey’s Smokehouse?
The ribs are smoked to perfection and are covered with an apple BBQ glaze. The pulled meats have a less sweet, thinner BBQ sauce. It’s not an NC vinegar sauce; it is still sweet, but not overly sweet, and not hot, and it works perfectly with the smoked meats.
If you are traveling with a group and like to sample a little bit of everything a barbecue place has to offer, then the item of choice is the “Table Buster for 4-6.” This is a huge platter with a little of everything. The standard Table Buster consists of a full rack of St. Louis ribs, a half-rack of baby back ribs, pulled chicken, pulled pork, beef brisket, and Bailey’s homemade chorizo. It also comes with seasoned fries and your choice of three large sides.
All of the sides are good, but only one stands out FAR in front of the rest: the corn souffle is NOT to be missed. “Fantastic” is not a strong enough word to describe this masterpiece. When ordering the three large sides with your Table Buster, be sure to make at least two of them the corn souffle, because it will go fast! At around $60 for the Buster, split 4-6 ways, you can’t do much better, and there is certainly enough food that nobody will leave hungry.
