I had a 4.5 lbd Ribeye in the fridge, but never go around to making a full dinner this weekend. I ended up sticking it in the smoker at 250 for 4 hours until it reached 125. All I had on it was a bit of salt and pepper and a very small junk of wood for smoke. Turned out pretty darn good and will provide some lunch time sandwichs this week.
