Lazagna is one of my favorite foods to make and freeze. Very easy to take out a slice, nuke it, and serve with some corn and a side salad. My sauce is just hamburger, onions, whole tomatoes chopped up, a can of tomato paste and what ever other tomatoes happen to be around, stewed, chopped, pureed, what ever. Other ingredients in the sauce are salt, pepper, garlic, oregano, bay leafs, basil, sugar and some olive oil. Cheeses are mozzarella, provolone and ricotta.
I m a boiled noodle kind of guy. I think they end up with a better texture and it takes out some of the starch.
I make a pretty healthy pot of sauce. Mom never did make enough and there was nothing worse then getting to the top layer and trying scrape enough out of the pot to cover the corners. I don t know what the heck she thought would happen if we had too much sauce. I do know I m permanently scarred.
I did try and get fancy and write out Road Food with cheese on the top. I can barely write with a pen, so I don t know why I was under the impression I could write with cheese. The dog got to eat ROA and I started over with little stripes.
