Having just spent two weeks in rural and urban China, I can tell you that none of the dozens of Chinese restaurants I have been to in the USA is the real deal. They are all “Americanized” and probably just as guilty as PF Changs. Ask for General Tsao’s Chicken, shrimp with lobster sauce, etc. in China and you will get a very puzzled look! I will be impressed and delighted once I see hand-pulled or hand-sliced noodles at home.
